Spaghetti Squash Chicken Pasta

Ingredients: -1/2 Spaghetti squash -1 serving ground chicken or turkey -1 serving of healthy pasta sauce -basil, salt & pepper -2 tbsp olive oil -1/2 zucchini -handful of sliced mushrooms -handful of cherry tomatoes -optional: vegan cheese or regular cheese Instructions: -Preheat the oven to 400F -Cut a spaghetti squash in half long ways, deseed it with a fork & place it on a baking pan. -Drizzle 1-2 tbsp of olive oil over it and using a spoon or your fingers, spread the oil evenly over the top! Then sprinkle a little salt & pepper & place it face down on the pan: roast in the oven at 400F for 35-40 minutes or until golden brown -Cook your ground chicken stovetop on a pan with a drizzle of olive oil, salt & pepper on medium high for about 10-12 minutes until fully cooked. Stirring periodically. -On a separate pan, sauté your sliced zucchini, mushrooms, and cherry tomatoes on high with a drizzle of olive oil, 1/2 cup of water, salt & pepper! Cook until soft! -Combine the veggies & meat in one pan & pour your spaghetti sauce over top, mix thorough & keep on low heat until the squash is ready -Pull the squash out, use a fork to scrape the sides of the squash into noodles then pour the sauce mixture over top! -Top with cheese & enjoy!

My mom and I just tried to make the spaghetti squash part and it was SO good and it was very easy! definitely going to make this more often :)
