Ingredients:
-2 eggs
-2 egg whites
-1/2 sweet potato ( already cooked- I used a baked one, and just pulled apart small pieces!)
-salsa of choice
-microgreens
-vegan cheese (or regular)
-salt & pepper
Instructions:
-whip your eggs & egg whites in a bowl & set aside
-add a lil coconut or olive oil to the pan, set on medium heat & add the pieces of sweet potato to heat them up a bit
-then pour the eggs overtop & sprinkle a little cheese, salt & pepper
-put the pan on low heat, flip the large omelette once then cover the top & let sit for a few minutes until it is forming
-remove from pan & top with micro greens, salsa, salt & pepper!
