This was amazing! I made it for my family and everyone loved it! So filling and delicious!

Vegetable soup: makes 3-5 servings

7-9 Tomatoes
1 large Zucchini
1 large Onion
7-8 Mushrooms
2 tbsp olive oil
1 garlic clove
Salt & pepper
6-8 leaves of fresh basil
1/3 cup light coconut milk

Slice up all your veggies & toss on a pan with 2 tbsp olive oil, a generous dash of salt & pepper. Garlic, and basil leaves.

Cook in an oven for 25-27 minutes at 350F ( until veggies are thoroughly cooked & soft)

Pour all veggies into a blender (make sure to pour all the sauce on the pan in the blender too!)
Add the coconut milk to the blender & blend on medium high until the consistency is how you like it!

Pour and serve hot & fresh or store overnight in the fridge!

PS: toasting some bread to dip it in is really good too! :)

IT WAS LIFE CHANGING!! Brynley you outdid yourself with this one😋🤤it was so good and tasted just like a normal cookie cake but healthy and it has protein! Tysm for this amazing recipe!!
side note: for anyone who doesn’t have eggs (like me lol) I just substituted them for baking powder so that it still fluffed up in the microwave
