Bluberry Muffin: single serving | Gluten-free, dairy free, low sugar, high protein
-1/3 cup Oat flour
-1 scoop vanilla protein (I use gainful)
-1 egg
-1 tbsp almond butter
-1/2 mashed banana
-dash of cinnamon
-dash of salt
-handful of blueberries
-Optional: 1 date cut into tiny cubes
** I use a ramekin dish for this!
Instructions:
1. Preheat oven to 400 and spray coconut oil on your ramekin dish.
2. In a large bowl, combine all the wet ingredients: banana, egg & almond butter. Then, stir in the dry ingredients (but leave out the blueberries while mixing.)
3. Once mixed thoroughly, stir in the blueberries, (or whatever filling you want! I use chocolate chips and date pieces sometimes too!)
4. Scoop the mix into the ramekin dish- make sure its not overflowing because it will rise a bit!
5. Bake for 15 – 17 minutes- using a tooth pick to check the inside at the last few minutes!
6. I top mine with a little almond butter, cinnamon & honey! ENJOY!
