Turkey Meatball Spaghetti

Ingredients:
75g spaghetti
100g ground turkey
2 tablespoons breadcrumbs
2 tablespoons grated Parmesan cheese
1/2 egg
1/2 clove garlic, minced
1/2 tablespoon chopped fresh parsley
Salt and pepper to taste
1/2 cup (about 125g) low-fat pre-made marinara sauce
Method:
Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
Preheat the oven to 200°C (400°F). Line a small baking sheet with parchment paper or lightly grease it.
In a small mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, egg (half of a beaten egg), minced garlic, chopped parsley, salt, and pepper. Mix until well combined.
Shape the turkey mixture into meatballs, about 1-inch in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and lightly browned.
While the meatballs are baking, heat the pre-made marinara sauce in a small saucepan over medium heat until warmed through.
Once the meatballs are cooked, add them to the saucepan with the marinara sauce and toss gently to coat them evenly.
Serve the turkey meatballs and marinara sauce over the cooked spaghetti. Throw on some basil leaves and extra parmesan if you’re feeling fancy!
Customisation Ideas:
During a bulk, I would probably double the amount of spaghetti here.
If I was trying to keep calories as low as possible I might opt for spiralised courgette/zucchini instead of the spaghetti.
By all means use a homemade marinara sauce - I just went pre-made here for convenience. Be careful of how much oil goes into it, though!
