Steak Stir-Fry Calories/Macros: 645 kcal 48g Protein 84g Carbohydrate 13g Fat Ingredients: 200g steak (sirloin or flank), thinly sliced 75g rice noodles 1/2 red bell pepper, sliced 1/2 green bell pepper, sliced 1 small onion, sliced 2 cloves garlic, minced 2 tablespoons soy sauce 1/2 tablespoon sesame oil 1/2 tablespoon honey Salt and pepper to taste Low-calorie cooking spray Method: • Cook the noodles according to the package instructions. Drain and set aside. • Heat a large skillet or wok over high heat. Spray with cooking spray and add the thinly sliced steak strips and stir-fry for 2-3 minutes, or until browned and cooked to your liking. • Remove the steak from the skillet and set aside. • In the same skillet, add a bit more cooking spray while adding the sliced onion, then stir-fry for 1-2 minutes until fragrant and slightly softened. • Add the sliced bell peppers and minced garlic to the skillet and continue to stir-fry for another 2-3 minutes, or until the peppers are slightly softened. • Return the cooked steak strips to the skillet. Pour in the soy sauce, honey and sesame oil, and toss everything together until well combined. Season with salt and pepper to taste. • Add the cooked noodles to the skillet and toss with the steak and vegetable mixture until everything is evenly coated and heated through. • Once heated through, remove the skillet from the heat and serve. Customisation Ideas: To make this plant-based, just swap the steak for a meat substitute like soy chicken chunks of seitan “steak” strips. Obviously, to bump up the carbs, just use more noodles. If you’re trying to keep carbs lower, ditch the noodles and double-up on the vegetables.
