One-Pot Chicken Bake Calories/Macros: 596 kcal 55g Protein 40g Carbohydrate 24g Fat Ingredients: 1 large chicken breast, cut into chunks 1 medium sweet potato, peeled and diced 1 medium carrot, diced 1/2 bell pepper, diced 1/2 medium courgette/zucchini, diced 2 cloves garlic, minced 1 tablespoons olive oil 1 tablespoon Italian seasoning (or a mix of dried herbs like oregano, basil, thyme) Salt and pepper to taste Method: • Preheat your oven to 200°C (400°F). • In a large oven-safe skillet or baking dish, combine the diced sweet potato, carrot, bell pepper, courgette, minced garlic, olive oil, Italian seasoning, salt, and pepper. • Toss everything together until the vegetables are evenly coated. • Place the chicken breast chunks on top of the vegetable mixture in the skillet or baking dish. • Season the chicken breast with additional salt, pepper, and Italian seasoning if desired. • Cover the skillet or baking dish with foil or a lid. • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender when pierced with a fork. • If desired, remove the foil or lid during the last 5 minutes of baking to allow the chicken and vegetables to brown slightly. • Once cooked, remove from the oven and let it cool for a few minutes before serving. Customisation Ideas: If you want to get more carbs in, double or triple the amount of sweet potatoes in there. On the other hand, if carbs are being kept to a minimum, ditch the sweet potato entirely and have more of the other vegetables. Try doubling the recipe so you can take it into the office for lunch tomorrow!
