Ingredients:
- 1 large chicken breast
- 100g low-fat cream cheese
- 2 tablespoons fresh parsley, chopped
- 2 bacon rashers
- 1 head of broccoli, cut into florets
Method:
- Preheat your oven to 180°C (350°F).
- In a small bowl, mix the cream cheese with the chopped parsley. Season with a pinch of salt and pepper.
- Cut a pocket into each chicken breast, being careful not to slice all the way through. Stuff each chicken breast with the cream cheese mixture.
- Wrap 2 bacon rashers around the chicken breast.
Transfer to a skillet and bake for 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 75°C (165°F).
- While the chicken is baking, steam the broccoli florets until tender, about 5-7 minutes.
- Serve and enjoy!
