Healthy English Breakfast Calories/Macros: 673 kcal 51g Protein 34g Carbohydrate 37g Fat Ingredients: 2 rashers turkey bacon 2 low-fat sausages 1 large tomato, halved 200g mushrooms, sliced 2 eggs 1 slice sourdough bread 1 tablespoon oil (I like avocado oil) Salt and pepper to taste Method: • Preheat the oven to 200°C (400°F). • Place bacon medallions, low-fat sausages and tomato on a baking tray lined with parchment paper. • Drizzle the tomatoes with oil and bake in the preheated oven for 15-20 minutes, or until everything is cooked through and golden brown. • Heat your oil in a frying pan over medium heat. Add sliced mushrooms and cook for 5-7 minutes, or until they are tender and golden brown. • Season with salt and pepper to taste and set to one side. • In the same pan, cook the eggs as you desire (e.g. sunny-side-up, over easy, scrambled). • Toast whole wheat bread slices until golden brown. • Get it all on a plate and enjoy. Customisation Ideas: There’s an endless amount of customisation options for this meal! Play around with the quantities to suit your goals and tastes. If you’re very tight on calories, consider ditching the bread and using egg whites cooked in 1kcal spray rather than whole eggs cooked in oil. To bump up the calories, add some more bread and use regular back bacon and full-fat sausages. For a vegetarian option, swap the bacon and sausages for veggie alternatives
