Salmon Quinoa Salad

Ingredients:
100g salmon fillet
60g quinoa, rinsed
60g mixed salad greens (such as spinach, arugula, or mixed baby greens)
1/4 cucumber, diced
50g cherry tomatoes, halved
1/4 red onion, thinly sliced
30g crumbled feta cheese
1 tbsp balsamic vinegar
1/2 tbsp lemon juice
Salt and pepper to taste
Method:
• Cook the quinoa according to the package instructions. Once cooked, fluff it with a fork and let it cool to room temperature.
• Preheat the grill or a non-stick skillet over medium-high heat.
• Season the salmon fillet with salt and pepper.
• Grill or pan-sear the salmon for 4-5 minutes on each side, or until cooked through and flakes easily with a fork.
• Remove from heat and let it cool slightly before flaking it into bite-sized pieces.
• In a large mixing bowl, combine the cooked quinoa, mixed salad greens, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and flaked salmon.
• Pour the lemon juice and balsamic vinegar over the salad ingredients in the mixing bowl and toss gently to coat everything evenly.
• Sprinkle the crumbled feta cheese over the salad and serve.
Customisation Ideas:
If you’re tight on calories, ditch the quinoa to reduce the total carbohydrates in the meal.
If you need to get more calories in, try doubling up on the quinoa and adding some olive oil to the dressing.
