Salmon Quinoa Salad Calories/Macros: 560 kcal 31g Protein 55g Carbohydrate 24g Fat Ingredients: 100g salmon fillet 60g quinoa, rinsed 60g mixed salad greens (such as spinach, arugula, or mixed baby greens) 1/4 cucumber, diced 50g cherry tomatoes, halved 1/4 red onion, thinly sliced 30g crumbled feta cheese 1 tbsp balsamic vinegar 1/2 tbsp lemon juice Salt and pepper to taste Method: • Cook the quinoa according to the package instructions. Once cooked, fluff it with a fork and let it cool to room temperature. • Preheat the grill or a non-stick skillet over medium-high heat. • Season the salmon fillet with salt and pepper. • Grill or pan-sear the salmon for 4-5 minutes on each side, or until cooked through and flakes easily with a fork. • Remove from heat and let it cool slightly before flaking it into bite-sized pieces. • In a large mixing bowl, combine the cooked quinoa, mixed salad greens, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and flaked salmon. • Pour the lemon juice and balsamic vinegar over the salad ingredients in the mixing bowl and toss gently to coat everything evenly. • Sprinkle the crumbled feta cheese over the salad and serve.
