Ingredients:
- 200g chicken breast, diced
- 1/2 cup dried lentils (green or brown), rinsed
- 1 can (400g) diced tomatoes
- 1 small onion, finely chopped
-2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 tablespoon olive oil
Method:
- Preheat your oven to 180°C (350°F).
- In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened.
- Add the diced chicken breast to the pan and cook for 5-7 minutes, until browned on all sides.
- Stir in the ground cumin, paprika, salt, and pepper, and cook for another minute.
- In an oven-safe dish, combine the cooked chicken mixture, rinsed lentils, and diced tomatoes (with their juice).
- Cover the dish with foil and bake in the preheated oven for 30-35 minutes, or until the lentils are tender and the chicken is cooked through.
- Serve hot and enjoy!
