Ingredients:
1 can tuna in water/brine, drained
2 tablespoons fat-free Greek yogurt
1/2 teaspoon sriracha sauce (adjust to taste)
3-4 slices pickled jalapeños, finely chopped
¼ small red onion, finely chopped
Salt and pepper to taste
2 large slices sourdough bread
40g reduced-fat cheddar cheese, grated
Low-calorie cooking spray
Method:
In a mixing bowl, combine the drained tuna, Greek yogurt, sriracha sauce, jalapeños, red onion, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Heat a non-stick skillet over medium heat.
Spread the tuna mixture across one slice of sourdough bread.
Top tuna-covered bread slice with reduced-fat cheese slices.
Place the remaining slice of sourdough bread on top to form a sandwich.
Lightly grease the preheated skillet with cooking spray or butter. Carefully transfer the sandwiches to the skillet.
Toast the sandwich for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
Once toasted, remove the sandwiches from the skillet and let them cool for a minute before slicing.
Slice the spicy tuna toasted sandwiches diagonally and serve hot.
Customisation Ideas:
If you’re on a bulk and want to up the calories, try using full-fat mayonnaise instead of the greek yogurt or spreading the mix across two sandwiches to really get the carbs up.
If you’re trying to keep calories low, maybe combine the tuna mix with a salad rather than having it as a sandwich.
