Ingredients:
50g rolled oats
80ml plant-based milk
1 mashed banana
1 scoop vanilla vegan protein powder
1 teaspoon baking powder
1 teaspoon vanilla extract
50g blueberries (fresh or frozen)
Method:
- In a blender or food processor, combine the rolled oats, mashed banana, plant-based milk, vegan protein powder, baking powder, and vanilla extract. Blend until smooth and well combined.
- Gently fold in the blueberries until evenly distributed in the batter.
- Preheat a non-stick skillet or frying pan over medium heat. Lightly grease with low-calorie cooking spray.
Pour small amounts of the pancake batter (about 1/4 cup) onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.
Repeat with the remaining batter, adding more cooking spray as needed.
Customisation Ideas:
- Play around with different combinations of fruit or other flavours of protein powder to mix this up.
- If you need to get more carbs in, bump up the amount of oats you use, give them a drizzle of maple syrup and throw some fruit on top!
