Egg and Avocado Toast (V) Calories/Macros: 432 kcal 21g Protein 42g Carbohydrate 20g Fat Ingredients: 1 slice sourdough bread 1 ripe avocado Juice of 1/2 lime 2 eggs Red chilli flakes Method: • Toast the sourdough bread until golden brown and crispy. • While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. • Mash the avocado with a fork until smooth or leave it slightly chunky if desired. • Add the juice of half a lime to the mashed avocado and mix well. Season with salt and pepper to taste. • Heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your preference (such as sunny-side-up, over easy, or scrambled). Season with salt and pepper to taste. • Once the bread is toasted, spread the lime-infused mashed avocado evenly over it. • Top the avocado-covered toast with the cooked eggs. • Sprinkle with red chilli flake, then serve. Customisation Ideas: To bump up the protein, why not add some ham or smoked salmon on top of the avocado! Obviously this is quite a light lunch, so on a bulk, you could have two slices of toast and four eggs.
