Greek Chicken Salad

Ingredients:
200g chicken breast, grilled and sliced
100g cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
50g feta cheese, crumbled
50g Kalamata olives, pitted
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Method:
• Season chicken breast with salt, pepper, and dried oregano.
• Grill or pan-sear until cooked through, then slice into strips.
• In a large bowl, combine sliced grilled chicken breast, halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, pitted Kalamata olives, and diced green bell pepper.
• In a small bowl, whisk together extra virgin olive oil, red wine vinegar, and a pinch of salt and pepper to make the dressing.
• Drizzle the dressing over the salad ingredients and toss gently to coat everything evenly.
Customisation Ideas:
To add in some extra carbs, throw the salad on top of some white rice or potatoes.
