Chicken Quesadilla

Chicken Quesadilla Calories/Macros: 435 kcal 45g Protein 30g Carbohydrate 15g Fat Ingredients: 150g chicken breast 1 whole wheat tortilla 30g reduced-fat cheddar cheese, shredded 1/4 red bell pepper, diced 1/4 small onion, diced 1/4 teaspoon ground cumin 1/4 teaspoon chili powder Low-calorie cooking spray Salt and pepper to taste Method: • Heat a non-stick skillet over medium heat. • Season chicken breast with ground cumin, chili powder, salt, and pepper. • Grill or pan-sear until cooked through, then shred into small pieces. • Place the whole wheat tortilla on a flat surface. Sprinkle half of the shredded cheese evenly over one half of the tortilla. Top with cooked shredded chicken, diced bell pepper, and onion. • Sprinkle the remaining shredded cheese over the top. • Fold the other half of the tortilla over to cover the filling, creating a half-moon shape. • Lightly grease the preheated skillet with cooking spray. Carefully transfer the assembled quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. • Remove the cooked quesadilla from the skillet and let it cool for a minute. Slice the quesadilla into wedges and tuck in. Customisation Ideas: If you like your spice, try throwing in some jalapeños.
