Chicken, Rice and Veggies Calories/Macros: 510 kcal 49g Protein 65g Carbohydrate 6g Fat Ingredients: 75g dry rice 200g chicken breast, cut into chunks. 1 small zucchini/courgette, diced ½ bell pepper, diced Low-calorie cooking spray 2 tablespoons hot sauce (optional) Method: Cook the rice according to the package instructions until tender. Drain if necessary and set aside. In a non-stick skillet or frying pan, spray a little low-calorie cooking spray and heat over medium-high heat. Add the chicken breast pieces to the skillet and cook until they are browned and cooked through, stirring occasionally. Once the chicken is cooked, add the diced courgette and bell pepper to the skillet. Cook for 3-4 minutes until the vegetables are slightly softened. Reduce the heat to low and add the hot sauce to the skillet. Stir well to coat the chicken evenly. Add the cooked rice to the skillet with the chicken. Stir everything together until the rice is well coated in the hot sauce and heated through. Once heated through, remove the skillet from the heat and serve.
