Prawn Skewers with Rice

Ingredients:
200g large prawns, peeled and deveined
1 bell pepper (any colour), cut into chunks
1 courgette/zucchini, sliced into rounds
1 red onion, cut into chunks
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon paprika
Salt and pepper to taste
1 packet (250g) microwave rice, any flavour
Wooden skewers, soaked in water for 30 minutes
Method:
• Preheat the grill or a grill pan over medium-high heat.
• In a small bowl, combine the olive oil, lemon juice, paprika, salt, and pepper.
• Mix well to make the marinade.
• Thread the prawns, bell pepper chunks, zucchini slices, and red onion chunks onto the soaked wooden skewers, alternating the ingredients.
• Brush the marinade over the prawn and veggie skewers, coating them evenly.
• Place the skewers on the preheated grill or grill pan. Cook for 2-3 minutes on each side, or until the prawns are pink and opaque and the vegetables are tender and slightly charred.
• While the skewers are cooking, prepare the microwave rice according to the package instructions.
• Once the skewers are cooked through, remove them from the grill.
• Serve the prawn and veggie skewers immediately on a bed of rice!
Customisation Ideas:
Of course, if you’d rather cook your own rice - do that! I only included microwave rice on this recipe for speed.
If you’re keeping your carbohydrates low, skip the rice all together or just use less.
If you don’t have much fat to play with, reduce the amount of oil in the marinade. I would still include at least a teaspoon, though.
