these were so easy!!
INGREDIENTS:
- 1 Cup strawberries and/or raspberries
- 2 Tbls chia seeds
- 1/2 - 1 Tbls honey or maple syrup
- 1 Cup chocolate chips (or use your favorite chocolate bar!)
- 1/2 - 1 Tbls coconut oil (optional, but it can help with your melted chocolate shell!)
INSTRUCTIONS:
- mash your berries with a fork
- add chia seeds, honey/maple syrup & mix together
- let mixture sit for 20 minute (this allows the chia seeds to thicken!)
- spoon dollops of the mixture onto a parchment paper lined plate
- leave in freezer for about an hour or until the dollops are sturdy
- melt your chocolate on stovetop in a pan with optional coconut oil (microwave is less desirable because chocolate is easier to burn!)
- take your dollops out of the freezer & begin dunking/dipping them in your melted chocolate
- place the bites back on the parchment paper lined plate
- set back in freezer (sometimes the insides can melt during the dunking.dipping process!)
- store in freezer & ENJOY!
