I found these in the freezer isle of the grocery store & they were a fun swap for toast! You could easily buy sweet potatoes from the produce section, slice into 1/4 of an inch, bake & top!
Here's how I made mine :)
INGREDIENTS:
- Frozen "Caulipower" brand Sweet PotaTOASTS (or, 1 Large cooked/cooled Sweet Potato)
- 3 eggs
- salt & pepper
- almond butter
- 1/2 banana
- cinnamon
INSTRUCTIONS:
1. Preheat oven to 425°F
2. Arrange frozen sweet potaTOAST slices on a baking sheet (no oil needed) & bake until the slices are tender and easily pierced with a fork (about 15-18 min or until heated through at desired consistency)
3. Remove & let's add some toppings!
4. For Savory slice: I hard boiled 3 eggs for ~8 minutes, peeled the shell & seasoned w/ salt & pepper.
5. For Sweet slice: I added a spoonful of almond butter, sliced half a banana & sprinkled w/ cinnamon.
6. ENJOY!
*Note: You can use a toaster, toaster oven, air fryer, or skillet to prep your sweet potato slices-- simply follow online cooking instructions for alternative methods!
