Spinach, Cheese & Artichoke Stuffed Chicken with Rice
INGREDIENTS:
-spinach
-canned artichoke
-Boursin cheese
-2 chicken breast
*serves two*
STUFFING:
-sauté 1 small bag of spinach
-add 1 can chopped artichoke
-add Boursin cheese
-mix and melt together. remove from pan for later.
-season chicken with salt, pepper & garlic salt.
-cut a slit in the chicken breast on the side
-sear chicken on each side for 3-4 minutes
-remove from pan and stuff the spinach dip inside.
-finish in the oven at 400 for 12 minutes or until chicken is cooked to 165F.
-serve with rice and enjoy.
