A "healthier" version of your favorite take-out orange chicken, in meatball form! Use ground turkey or chicken, these are a hit for the whole fam (definitely recommend making enough for leftovers!)
INGREDIENTS:
MEATBALLS
- 1 lb. ground chicken or ground turkey
- 1 egg
- 1/2 C almond flour (or another flour, this acts as a binder)
- 1 TSP onion powder
- 1/2 TSP garlic powder
- 1 TSP ground salt & 1/2 TSP pepper
- Zest of 1 orange (minced)
- olive oil (to coat the pan)
SAUCE
- 1 1/5 C orange juice
- 1/2 C orange juice concentrate
- 2 TBS fresh minced orange zest
- 2 TBS minced garlic
- 1 TSP sesame oil
- 1 TSP tapioca starch (to thicken sauce, after)
OTHER
- 2 florets fresh broccoli
- Bags of steamed rice (or can make fresh)
- sesame seeds
- green onions
- any other additions you prefer to enjoy with your meatballs
