Try one of my FAVORITE recipes ever!
ingredients:
-1/2 box pasta of choice (i love rotini)
-1/3 jar red sauce (i love rao’s)
-1 package of cherry tomatoes
-4 Oz package of feta cheese
-1 shallot (optional)
-1 garlic clove (optional)
-fresh basil
-salt & pepper
-olive oil
-add chicken(optional)
*serves 2-3 with a few leftovers
*you can DOUBLE this for more & to have more left overs.
directions:
-chop cherry tomatoes, garlic, shallot and basil
-add cherry tomatoes, garlic and shallot to a 9x13 baking dish & season with salt & pepper
-sprinkle the feta cheese on top
-drizzle olive oil and add fresh basil
-bake at 400 for 30 minutes
while that’s baking, boil the pasta. i love rotini because the sauce gets in all the little spirals.
if you want to add chicken, season and cook your chicken now while the pasta is baking.
-remove the baking dish and stir everything together.
-add the pasta and warmed red sauce**(see bottom note)
-serve with fresh basil & enjoy
*note-if your baked tomatoes & feta is saucy enough, you don’t need extra red sauce. we like it very saucy so we prefer to add it in.*
