Avocado Egg Breakfast Sandwich

INGREDIENTS: - 1 English muffin - 2 eggs - 2 slices deli turkey/ham/bacon - 1⁄2 small avocado - optional slice of cheese, or grated parmesan - salt, pepper, hot sauce, etc. 1. Cook/fry your egg in a pan on the stove. For a quick prep time, add the eggs into a microwave-safe cereal bowl, cover with a paper towel & microwave for 1 minute. The egg should be cooked through. If not, give it another 30 seconds or so. 2. Sprinkle the eggs with a pinch of salt & then top with the turkey/ham/bacon, optional cheese (if using). (If using microwave, melt cheese by microwaving for another 30 seconds. Otherwise, melt cheese using stove top.) 3. Toast your English muffin & slide the stacked egg & turkey/ham/bacon out of the bowl & onto the bottom half of your sandwich. Mash avocado, add salt & pepper. Optional hot sauce, drizzle of honey, tomato, onions, spinach, everything bagel seasoning, etc. Enjoy!
