Ingredients:
4 6-8oz Chicken Breasts
2 Cans Chickpeas
4 Sweet Potatoes
4 Heads of Broccoli
4 TBS Dijon Mustard
4 TBS Honey
Salt & Papper to taste
Chili Powder
Cayenne Pepper
Directions:
Prep your ingredients & store for easy grab-and-go assembly throughout the week!
1. Season & fully cook chicken breasts at 400*.
2. Rinse & drain chickpeas, season with chili powder, cayenne & paprika, line a baking sheet with foil & bake for 30-40 minutes at 400* tossing halfway.
3. Wash & peel sweet potatoes, cut into 1-inch cubes, season with salt, pepper, ground mustard, drizzle with olive oil, spread on a baking sheet & cook for 35-40 min at 400* flipping halfway.
4. Rinse broccoli, chop into bite size pieces, season with salt & pepper, drizzle with olive oil & toss, line a baking sheet & cook for 15 minutes at 400* until lightly crispy.
5. Create honey mustard sauce bu mixing honey & mustard together.
6. Assemble chicken, chickpeas, sweet potatoes, broccoli & add honey mustard sauce to enjoy your bowl!
