easy peasy summer recipe! ๐ฅ๐ถ๏ธ๐ซ๐ฅข
itโs protein packed, nutrient dense & a great way to get your veggies in!!!
ingredients:
- 1 English cucumber
- Rice (boil on stove top, or microwaveable bags are a great option!)
- 4-6 oz chopped Teriyaki Chicken (add your fav Teriyaki Sauce to prep'd / cooked chicken)
- Avocado
- Spicy Mayo (mix Mayo & Sriracha)
- Sesame Seeds
- Green Onion
RECIPE:
- Half & hollow out the seeds (i end up eating the entire cucumber but you can start with half!)
- Add a 'bed' of cooked rice
- Add chopped Teriyaki Chicken (I took cooked chicken breast I had on hand, cut it up & reheated in a pan with my fav teriyaki sauce from Trader Joeโs!)
- Add Avocado
- Drizzle Spicy Mayo (mix Mayo & Sriracha)
- Sprinkle Sesame Seeds
- Chop & top with Green Onion
