Ingredients:
• 1 T butter
• 4 Chicken Breasts
• 1 lg onion, diced
• 3-5 carrots, chopped
• 2 garlic cloves, minced
• 1 can chopped green chilies
• 28oz chicken broth
• 1 T chicken bouillon
• 1 tsp Cumin
• 1/4 tsp chipotle chili pepper
• 3 cans Great Northern Beans
Instructions:
Melt butter with chicken, onion, carrots, garlic then stir in broth and broth, bouillon, cumin. Bring to boil reduce heat and simmer stir occasionally, 20 min. Stir in 2 cans of beans and chilies.
Mash remaining beans in small bowl.
Whisk together 1 T flour and a little milk (about 1/4 c) and stir into beans. Gradually add bean mixture to soup. Cook 10 min or until thickened.
Remove from heat and top with fresh cilantro, sour cream, cheese & tortilla strips (not included in macros)
Serves 12 (approximately 1.5 cup per serving)
