Ingredients • 6 oz ground beef, 95% lean • 1/2 russet potato • 1 roma tomato • 1/4 red onion • 1 cup romaine lettuce • 1 - 2 small Pickles, chopped • 1/2 tbsp olive oil • Salt to taste Method • Pre heat oven to 400° F • Cut potato into thin slices and season with olive oil and salt. • Place onto cooking sheet and bake for 15 minutes. • While potatoes are cooking, brown ground beef in a pan until fully cooked. • Slice/dice Roma tomato, onion and lettuce and add to bowl. • Once meat and potatoes are cooked, add to bowl and top with pickles. 487 calories • 21g carbs • 20g fat • 52g protein Meal Prepping Tip: • This is a fantastic recipe to use pre-prepped potatoes and ground beef! • Cook several pounds of ground beef and a bag of potatoes (chopped and boiled) at the beginning of the week. • Warm up the ground beef in the microwave and potatoes in the air fryer until warm and crispy, then throw in your other ingredients to save time and effort!
