High Protein Cookie Dough

5.0|10 min
This was a request I made for Alex (SavoryGains) to create because I’m obsessed with cookie dough, and trust me…she delivered!! 🍪❤️ ✅ Product links at the bottom ✅ Ingredients: * 1 tub (8 oz) mascarpone cheese (I used BelGioioso) * 6 Tbsp Swerve brown sugar * 2 tsp sugar-free vanilla pudding mix * 2 tsp vanilla extract * 6 scoops vanilla protein powder (Clean Simple Eats) * 1 tbsp Fairlife milk * ½ cup Fit Flour (purchase from Fit Flour Shop) has 6X the protein and ⅓ of the carbs. * Optional: - Milk Chocolate chips (Ghirardelli or your choice; not included in macros 4 chips per portion) - Dark cocoa powder (for a chocolate version) and chocolate protein powder, I would do brownie batter from CSE Critical control points: •Use a mixer for creaming all ingredients well. Mix and scrape in between each additions. •The key for the best flavor is to have the right ratio of chocolate chips per portion 4-5 chip should be plenty per portion. Instructions: •Mix the Mascarpone: In a blender or mixer, cream together the mascarpone cheese first (instead of butter for lower fat content) and then add Swerve brown sugar until smooth. •Add Flavorings: Add the sugar-free vanilla pudding mix, vanilla extract, and Fairlife milk. Continue mixing until well combined. •Incorporate Protein Powder: Add the vanilla protein powder and blend until smooth. Scrape down the sides of the bowl as needed. •Add Flour: Slowly mix in the Fit Flour until fully incorporated. The dough should start to come together and thicken. •Mix in Chocolate Chips (optional): If you're adding chocolate chips, you can mix them into the dough now, or you can wait until you’ve portioned out the dough and add about 4 chocolate chips to each portion individually. •Portion: Roll the dough into a log and wrap it in plastic wrap. Refrigerate it, then cut the log into 9 equal portions (about 53g per serving). •Chill: For best texture, refrigerate the dough for a few hours. It will firm up and become easier to work with. It's really a preference, I like mine not too firm but not sticky either. •Optional Add-ins: You can swap to a chocolate version by using chocolate protein powder, pudding and adding cocoa powder. Macros per portion (53g): should give you 9 portions. * Calories: 208 * Carbs: 5g * Fat: 12g * Protein: 20g Now you've got the option to mix in chocolate chips either before chilling or after portioning. Enjoy!
