High Protein Chocolate Muffins

Recipe courtesy of @savorygains High-Protein Chocolate Muffins (Makes 8 Muffins) *PRODUCT LINKS BELOW* Ingredients: • 1 cup Keto Wheat Flour Blend (King Arthur) • 1 cup mashed Sweet Potato (I cooked mine in the microwave) • 1 scoop Chocolate Protein Powder (Genuine muscle milk chocolate flavor) • 1 egg • 2 tbsp 100% Cacao Dark Cocoa Powder • ½ cup Fat-Free Ultra-Filtered Milk • 1 tbsp Chocolate Chips( I chopped mine in small pieces) • 1/2 c Baking Blend (Zero Sugar) • 1 tsp vanilla • ½ tsp baking powder Macronutrients (Per Muffin): • Calories: 108 • Fat: 2.4g • Carbs: 28g (Net: 21g) • Protein: 13g Instructions: 1. Preheat Oven to 350°F (175°C). Grease or line a muffin tin. 2. In a mixer bowl, add sweet potato purée and mix. Add the egg and mix well. 3. Add the sweetener and continue mixing, scraping the sides as needed. 4. Add vanilla extract and cocoa powder, then mix until fully incorporated. 5. Add flour, protein powder, and baking powder, mixing well until smooth. 6. Pour in milk and mix until a smooth batter forms. 7. Drop in the chopped chocolate and fold gently 8. Fill Muffin Cups: Divide batter eventy into 8 muffin cups, filling about 1/2-¾ full 9. Bake for 17-18 minutes 10. Cool & Enjoy: Let muffins cool for a few minutes before removing them from the tin.
