Very Berry Protein French Toast
Ingredients:
12 slices Sara Lee low calorie bread
4 eggs
360g liquid egg whites
1 tsp vanilla extract
1 tbsp cinnamon
40 g plain, non-fat greek yogurt
1/2 tbsp 0-calorie sweetener of choice
2 c frozen mixed berries
1/4 c 0-calorie confectioners sugar
Instructions:
In a large bowl, combine your eggs, egg whites, yogurt, vanilla, cinnamon and sweetener. Beat well and set aside. In a pan on medium/high heat, spray with non-stick spray. Evenly coat each slice of bread in your custard and set on the pan. Cook about 2 minutes each side until browned. Remove from the heat and add 3 French toast pieces to each container. For your berry compote, microwave your berries & confectioners sugar for 2 minutes on high. Stir when warmed and set aside. To serve, you can either pour your compote directly over your French toast or keep in a smaller container and pour over before serving. Serve with additional sugar-free maple syrup and 0-calorie confectioners sugar.
