Copycat Starbucks Bacon Gruyere Egg Bites (makes 12, 3 per serving)

INGREDIENTS:
84 g shredded gruyere cheese (3 servings)
1/2 c low fat cottage cheese
4 eggs
300 mL liquid egg whites
5 slices of bacon, cooked and finely chopped
Salt & pepper to taste
INSTRUCTIONS:
Preheat your oven to 350F. To a blender, add your shredded cheese, whole eggs, egg whites and cottage cheese. Blend on high for 1-2 minutes, until very smooth. Add a 12 serving muffin tin to a baking pan. You will need to cook this inside on top of a baking pan. Spray your muffin tin with non-stick spray, then evenly add your egg mixture to the tin. Once each muffin tin is filled, add water to your baking pan. The water should be about 1/4 up each of your muffins. Carefully add this to your oven and bake at 350F for 25-30 minutes. Carefully remove from the oven, let rest for 10-15 minutes before removing from the pan. Store in the fridge up to 5 days and microwave to reheat and enjoy!
