PB & J FRENCH TOAST BITES INGREDIENTS: 16 slices low calorie Sara Lee bread 2 eggs 16 fl oz liquid egg whites 1 c unsweetened almond milk 2 scoops salted peanut butter level-1 protein 4 oz plain, non-fat greek yogurt 6 tbsp sugar-free jam 1 tsp vanilla extract 1/4 tsp salt Sugar-free maple syrup to taste INSTRUCTIONS: Preheat your oven to 375F. To a blender, add your eggs, egg whites, almond milk, protein powder, yogurt, salt and vanilla extract. Blend until well combined. Gather your bread, and slice it into small cubes. Add your cubed bread to a large bowl. Pour over your egg mixture into your bread and stir until well combined. Allow your bread to soak for 5-10 minutes so it fully absorbs the egg mixture. Spray your baking tin with non-stick spray. Evenly portion out your French toast mixture to the muffin tins. Lastly, top each bite with your sugar-free jam, evenly dispersing between each one. Bake at 375F for 25-30 minutes. Remove from the oven and allow to sit for 10-12 minutes before removing. Serve with sugar-free maple syrup and powdered PB2.
