Simple Chicken Fajita Bake
Ingredients:
3 large bell peppers, sliced thin
1 yellow onion, sliced thin
600 g chicken breast, raw, sliced thin
2 tbsp adobo seasoning
2 tbsp ground cumin
1 tbsp chicken bouillon
1 c (112 g) low fat Mexican blend cheese
Optional:
Shredded lettuce
Chopped tomatoes
Guacamole
Low fat sour cream
Instructions:
First, prepare your peppers, onion & chicken breast. Be sure your chicken is sliced thin, but all pieces are evenly cut. Toss together your veggies, chicken & spices.
To a large baking dish, add your veggies & chicken. Bake at 400 for 30-35 minutes, tossing halfway through.
Remove from the oven & top with your cheese. See the oven to broil and return to cook for 2-5 minutes until the cheese is melted and gooey.
Serve as is, or pair with additional lettuce, tomato, guacamole or sour cream!
