Steak Fajita Quesadillas
INGREDIENTS:
8 low carb tortillas (~70 calories each)
16 oz top sirloin steak, raw
3 bell peppers, sliced
1 yellow onion, sliced
90 g Bolthouse Farms ranch dressing
2 Tbsp adobo seasoning
120 g reduced fat Mexican blend cheese
INSTRUCTIONS:
First, prepare your vegetables. Cut your bell peppers and onions into thin slices. Be sure they are cut evenly. Add to your air fryer rack or baking sheet. Toss in 1 Tbsp adobo seasoning. Cook at 400F for 12-15 minutes, tossing halfway through. Set aside when they are complete.
Next, begin to prepare your steak. Cut your steak into thin, even strips. Season with 1 Tbsp adobo seasoning and toss until combined. In a large pan on med/high heat, spray with non-stick spray. Add your steak and cook for 5-7 minutes until cooked through. Occasionally stir the steak to ensure even cooking. Once done, set your steak aside with your vegetables.
Preheat your oven to 375F and begin assembling your quesadillas. Lay down your tortilla, add about small amount of ranch dressing & spread over your tortilla. Add your fajita vegetables, portion of steak (~2 oz), cheese (~15 g). Fold in half and repeat for the other 7 quesadillas.
To an oven rack, add the prepared quesadillas. Bake for 8-10 minutes or until golden brown. Optionally serve with sour cream, guacamole or salsa (macros not included).
