Bomb Kebobs & Rice
Ingredients:
600 g chicken breast, raw
1 large onion, cut into bite-sized pieces
4 bell peppers, cut into bite-sized pieces
400 g jasmine rice, raw
1 tbsp olive oil
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp salt
1/2 tbsp black pepper
1/2 tbsp turmeric
Instructions:
First, cut your chicken into cubed, bite-sized. Be sure all pieces are cut evenly. Prepare your veggies. Cut your onions and peppers into bite-sized pieces, about 2 inches wide. In a large bowl, add your chicken, veggies & all of your spices and combine well. Begin assembling your skewers. Add 2 pieces of pepper, 1 onion and 1 chicken piece. Repeat the process until your skewer is filled. Once your skewers are complete, bake at 375 on a rack for 30 minutes, flipping halfway through. Prepare your rice according to the directions on the package. Once complete, serve with rice on the bottom of each container and top with your chicken kebobs. Can optionally serve with 0-sugar BBQ, ketchup, honey mustard or low calorie sauce of choice.
