Taco Bowl with Corn Salsa
    (Makes 2 Portions)

1 Lb Lean ground beef
1 Tbsp Olive Oil
3 cloves Minced garlic
1/3 cup chopped yellow onion
Jasmine Rice
2-3 Fresh corn cobs
2 Small roasted jalapenos diced
1 red bell pepper diced
handful of chopped fresh chopped cilantro
½ cup black beans
Homemade Taco Seasoning:
- 1 Tbs Chili
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp dried oregano
- ¼ tsp red pepper flakes
- ½ tsp Paprika 
- 1 ½ tsp cumin
- 1 tsp each salt and pepper

First roast your corn cobs and jalapenos on a sheet pan in the oven for about 5 min or until becomes toasty!  Set aside to cool.  (Once cooled cut the corn kernels off the cobb)

In a skillet over med-high heat add the garlic and onions.  Let these cook for about 1-2 min until they become fragrant.  Now add your beef and taco seasoning.  Mix this all together really well.  Once cooked through remove from the heat and set aside.

In a bowl combine the corn, chopped jalapeno, diced bell pepper, cilantro, salt, pepper, and chili seasoning.  Give this a good mix!

Great recipe, Kyle! Made this one tonight for dinner. It was so good, had a hard time saving the rest for other meals!

The best flank steak I’ve ever had. Perfectly sweet and spicy. Had enough for leftovers because I doubled everything.
