Ingredients

3/4 - 1 cup graham cracker crumbs 
2.5 tbsp butter, softened 
8 oz cream cheese, softened 
1/2 cup plain Greek yogurt 
1/4 cup sugar 
1 large egg
1 tsp lemon juice 
1/2 tsp vanilla extract 
1 lemon (for garnish)
1 handful blueberries (for garnish)

Directions

1. Preheat over to 325° and line a muffin pan with cupcake liners.

2. The crust: in a food processor or blender mix together graham crackers and butter. When evenly combined, divide the mixture into the cupcake liners pressing into the mixture with a spoon to flatten. Bake the crust for 8 minutes, set aside and let cool. 

3. The cheesecake filling: in a blender or using an electric mixed, best softened cream cheese until smooth. Add in Greek yogurt and sugar. Finally, add in egg, lemon juice, and vanilla extract. 

4. Evenly pour the mixture over the crust. Bake for another 15-20 minutes. Remove from the oven and chill for 1-2 hours before serving! Top with your favorite fruit! Blueberries and lemon pair perfect together! 🤌🏼🍋🫐
