Description: Chocolate Chickpea Cookies

I’m such a fan of these 🫶🏼 filled with lots of good stuff and some chocolate on top! 🤍🤌🏼 Don’t knock it till you try it!!

Ingredients: 
• 1 can of chickpeas/ garbanzo beans (same thing) 
• 1/2 cup peanut butter 
• 3-4 tbsp. honey 
• 1 tbsp. cocoa powder 
• 1 tsp. vanilla 
• 1/2 tsp. baking powder 
• 1/2 tsp. baking soda 
• Pinch of salt 
• Mini chocolate chips 

Directions: 
1. Preheat oven to 350°.
2. In a food processor, blend together all of the ingredients besides the chocolate chips. You want a very smooth texture here, so make sure all of the means are finely blended! 
3. With a scoop, form balls and place onto a baking sheet with parchment paper. I usually flatten them a little bit! 
4. The consistency should be dense enough for you to pick up the balls and coat in chocolate chips! 
5. Bake for 15-20 minutes and serve!
