Yes, yes now that is one of my favorite dish. I have been using Greek yogurt for good while now, bc I don't like mayo. Chile powder or cayenne, lime, paprika, garlic salt, pepper goes on the cob of corn & greek yogurt wrap it up in foil and grill or bake it. Oh yeah!!! I'm a pro at that. In fact, I will be making some for my friends party next month :)

This Mexican Street Style Corn Salad is healthy, veggie-packed, & full of flavor! By swapping mayo for Greek yogurt, it’s lighter & has added protein. 💪

It’s the perfect side dish to bring to your next BBQ or fiesta! Add it to your tacos, burrito bowls or simply mix in your favorite protein. I’ve already eaten this corn with salmon, shrimp & even eggs! You can’t go wrong! 😋

Ingredients:

* 4 cups corn, can be fresh or frozen (I’ve used canned and on the cob – if frozen, thaw first)
* 1 tbsp avocado or olive oil
* 1/2 red bell pepper, diced
* 1/2 red onion, diced
* 1 jalapeño (optional) deseeded and diced small
* 1/2 cup cilantro, chopped (if won’t look like 1/2 cup once chopped)
* 1/2 cup plain Greek yogurt
* 1 large lime, juiced (about 3 tbsp)
* 1 tsp salt
* 1/2 tsp chili powder
* 1/2 tsp cumin
* 1/2 tsp smoked paprika
*1/2 tsp sriracha (optional)
* 1/3 cup crumbled cotija cheese + more for sprinkling on top

Instructions
1.  I prefer corn on the cob, so I grilled mine & then cut off the corn kernels once it was cooled. If you want to save time, you can use frozen corn. You’ll cook this by placing the corn in a large skillet over high heat with avocado or olive oil. Once hot, add the corn. The corn should be slightly charred so that it has a roasted flavor and some brown bits mixed in. This will take about 4-6 minutes. Be sure to toss the corn occasionally.

2. Pour into a large bowl and let cool.

3. Prepare the rest of your veggies (peppers, onion, and cilantro) by chopping. Once chopped, add them to the bowl with the corn.

4. In a small bowl, whisk together Greek yogurt, lime juice, salt, chili powder, cumin, paprika. Stir in cheese.

5. Add yogurt sauce to bowl and stir to combine everything well.

6. Top with more a little more cheese and cilantro.

7. Store in fridge for up to five days
