The yummiest one yet! We ate the entire dish in one sitting!

** Prepare chicken to preference or opt out to make this vegetarian **

Ingredients:
- 1 medium spaghetti squash or 2 small 
- 1 pack portobello mushrooms 
- 1 pack cherry tomatoes 
- 2 tbs garlic 
- basil 
- 6-10oz grilled chicken 
- 8oz feta 
- 1/4 juice of lemon 
- 1 shallot or 1/2 red onion 
- pepper, red pepper, garlic pepper (don’t add additional salt to this dish as the feta is salty)

Recipe:
1. Prepare chicken to preference, chop and set aside 
2. Poke holes (using a fork) all over squash and microwave for 5 minutes to tenderize 
3. Cut squash in half, spray with salt & pepper, drizzle with oil (or pam) and flip over
4. Bake for 1 hour at 350°
5. Chop mushrooms, onion and tomatoes and surround feta block in a baking dish
6. Top with lemon juice, garlic and seasonings
7. Bake feta mixture for 30 minutes on second rack
8. When squash is finished, let cool and use a fork to peel away from sides 
9. Take feta mixture out of oven, add squash and chicken & mix well 
10. Enjoy!
