Tuna salad cucumber boats 🥒
so easy and high protein, it’s a win-win!

Ingredients
5 oz tuna in water
1 tbsp mayo, plain Greek yogurt, or avocado
1/4 cup Chopped red onion
1/4 cup Chopped carrots
1-2 large (or 2-3 smaller) Cucumber
1/4 of a lemon
Salt and pepper to taste
Sriracha

Instructions:
Drain tuna then trader into a bowl and shred

Add any veggies you like! I added chopped carrots and chopped onion

Add your mayo (or Greek yogurt or mashed avocado), salt / pepper to taste, and your lemon juice.

Cut your cucumber in half lengthwise (cut again crosswise if you want shorter cucumber boats)

Scoop seeds out with a spoon (the more you scoop out the more room you’ll have for the mixture)

Spoon the tuna salad into the boats and drizzle with sriracha
