Blender Sweet Potato Waffles with Blueberry Sauce

⭐️1 cup Blueberries, fresh or frozen to cook into jam and add for topping. 

⭐️ 1 BAKED Sweet potato
⭐️ 2/3 cup Unsweetened Coconut milk
⭐️2 tbsp maple syrup
⭐️ 1 1/2 cups Oats, old-fashioned
⭐️1/2 tbsp Baking powder
⭐️1 tsp Cinnamon
⭐️3 tbsp Whole Wheat Flour
⭐️ 1 tbsp Vanilla extract

Add all ingredients except for the blueberries into a blender and blend until you get a creamy consistency. Then add batter to waffle cooker or make into pancakes. Serve with your favorite sides or toppings like banana, almond butter, Greek yogurt, honey, maple syrup, blueberry jam, nuts, pumpkin seeds, granola and/ or etc.
