Fluffy and lightly sweet cupcakes - using potato in a NEW way!

Ingredients:
> 1/2 cup roasted/mashed purple sweet potato 
> 1 egg
> 1/2 cup Greek yogurt
> 3/4 cup almond milk
> 1 bag/box yellow cake mix 

frosting: 
> 1/2 cup whipped cream cheese, 
> 1/2 cup powdered sugar, 
> 1/2 cup mashed purple sweet potato 

- combine all cake ingredients in a bowl and mix until batter forms. 
- scoop batter into a lined muffin pan 
- bake at 350 for about 30 minutes 
- mix frosting ingredients while baking
- once cupcakes cool, top with frosting
