Stuffed Beef Shells
(makes 3 portions)

1 lb 96/4 ground beef
15 Jumbo Shells
4 oz frozen drained spinach
½ cup Ricotta cheese (whole fat)
1 serving fresh grated Parmesan
2 cups marinara sauce (low fat)
½ cup chopped Onion
3 minced garlic cloves
1 tsp Avocado Oil
2 Tbs Italian seasoning
2 servings low skim mozzarella Cheese (56 grams)

Boil the shells first, keep them a little more al dente since they will be going back into the oven. Once done, drain the water and set shells aside.

In a pan over medium high heat add the oil, Italian seasoning, onion and garlic.  Once the garlic and onion become fragrant add your beef.  Brown this well, mixing often.  Once done remove from the heat and pour onto a paper towel to remove any excess fat.

In a large baking dish spread ½ cup of the marinara on the bottom, set aside.

In a large bowl thoroughly combine the cooked beef, spinach, ricotta, 1 cup pasta sauce, parmesan, salt, and pepper.  Then scoop approximately 2 oz or evenly distribute mixture into each shell.  Place these In the baking dish and top the remaining ½ cup marinara and the mozzarella cheese.

Bake in the oven at 375’F for 30 minutes.

Pasta weights in recipes are uncooked? It would be awesome if the macros in these type recipes were split between pasta and the main dish sauces/ toppings, as my carb macros are much smaller and require Lee's on the carb end. Love your app!❤️
