Summer Pasta Salad ๐Ÿซ‘๐Ÿ๐Ÿง…๐Ÿฅ—

This Pasta Salad recipe is PERFECT for Summer!! Enjoy with family/friends, or prep ahead of time to have as your lunches for the week! INGREDIENTS: (DRESSING) - 1/2 cup red wine vinegar - 1/4 cup olive oil - 2 Tbsp Dijon mustard - 1 tsp sugar (SALAD) - 1/4 red onion (thinly sliced!) - 1 lb rotini pasta - 1 orange bell pepper (sliced!) - 1 pt. grape tomatoes (sliced in half!) - 3/4 cup chopped marinated artichokes - 1/3 cup pitted kalamata olives (chop!) - 4 oz. cured salami (chop!) - 2 Tbsp. chopped fresh parsley (save extra for serving!) - 1 Tbsp chopped fresh oregano - 14 oz. fresh mozzarella (chop/crumble!) RECIPE: - Salt and bring a large pot of water to a boil, then add pasta and cook according to package - Make your dressing by whisking the vinegar, oil, mustard, and sugar in a bowl. Move half of dressing to a large bowl and add/soak sliced onions while the pasta cooks - Drain pasta and add to onion mixture (toss until liquid is absorbed!) Let cool to room temperature - Add your sliced/chopped bell pepper, tomatoes, artichokes, olives, salami, parsley, oregano, and the remaining dressing (toss it around to coat!) - Fold in your mozzarella, then sprinkle with your extra parsley & ENJOY!! PS. feel free to leave out/swap any ingredients you don't love! You really can't go wrong with Pasta salad ingredient combos :)
