SUMMER BOWL ๐๐ฅ๐ซ๐ฅฉ
this recipe is quick, easy & delicious. it also helps with your veggie intake!!!
RECIPE:
- 1 cooked chicken breast *seasoned with salt, pepper, cumin, garlic*
- 1/2 C rice *or grain of choice*
- bell pepper & zucchini *honestly i could have eaten a whole zucchini so add as much as you want, at least 1/4 C of each*
- roasted corn *ok i forgot this and was so sad ๐ญ but itโs optional it tasted so good even without it*
- 2 handfuls of chopped up spinach
- optional to add 1/4 - 1/2 avocado & some squeeze of lime!
- top with turmeric, cumin & ranch!
lmk if you try!! itโs sooo delicious and quick if you have already have some leftover meal prepped chicken & rice.
*you can sub chicken for chickpeas if vegan! and use quinoa instead of rice if youโd like*
